‘Perad’ or Guava Cheese is a popular desert from Goa, especially around Christmas. It is one of the many dishes introduced into the Goan cuisine by the Portuguese, who also called in ‘Goiabada’.
It has a fudge like texture and can be cut into pieces and eaten as a desert. You can also spread it over toast or use it as a filling in pies and pastries.
Ingredients:-
- 1 Kg Guavas (Not over ripe)
- 700 grams Sugar
- 2 tablespoons butter
- 1 teaspoons citric acid
- 3 drops of a color of your choice (we used red)
Wash, dry and cut the guavas into small pieces. Remove the guava seeds and grind to a fine paste.
Mix all the ingredients & cook them on a high flame until it comes to a consistency, where it starts leaving the sides of the pan. You should cook until you see the liquid bubble.
Once this happens, reduce the heat. When the spoon is dragged through the bottom, it should separate. The bottom of the pan should be visible.
Pour onto a greased steel plate and allow it to cool for a few hours. Once it is set, you can cut it into small cubes. Lightly sprinkle with powdered sugar & serve chilled.
